Pink Champagne Cupcakes

Cupcakes are the best.
Champagne is the best.
What if there was a way you could combine the two?
Oh Wait - THERE IS!
Just in time for Valentine's Day, I discovered: Pink Champagne Cupcakes!
O. M. G, You guys.
These are SO bomb!
Basically all you have to do is buy boxed cake and replace the water with champagne, and voila! Champagne cupcakes!
These are so easy and delicious, so lemme break it down for you how to make these for your valentine (Or your co-workers.) (Or all for yourself...)

Cake Ingredients:
- 1 Box White Cake Mix (I used Betty Crocker)
- 1 1/4 Cups Champagne
- 1/3 Cup Vegetable Oil
- 3 Egg Whites
- 4 to 5 drops Pink Food Coloring

How To Make It:
1. Preheat oven to 350 degrees and line cupcake tins with foils
2. In a large bowl, mix cake mix and champagne. Then add oil, egg whites & food color. Beat with an electric mixer for 2 minutes.
3. Pour evenly into cups. Bake 17 to 22 minutes or until toothpick inserted in the center comes out clean. Let cool for 10 minutes then frost.

Frosting Ingredients:
- 4 Cups Powdered Sugar
- 1/2 Cup butter, softened
- 1/4 Cup Champagne
- 1 Teaspoon Vanilla
- 4 to 5 drops Pink Food Coloring

How To Make It:
1. In a Medium Bowl, beat frosting ingredients with an electric mixer on medium speed until smooth, then frost your cakes!
(A Mere 3 Months ago I was a Frosting-From-Scratch Virgin, and then I learned how easy and delicious it is and I can't get enough!

Try these cupcakes on their own or finish that bottle to wash them down!

  1. I tried these and they were AMAZING. I was especially surprised that they were so light and fluffy! I will be making these in the very near future. Thanks Tarreyn Land!
